Cabbage, Carrot, Cucumber and Mint Slaw

Most people could stand with having a little more vegetables in their diet. While some cite that vegetables are boring or timely to prepare as the reason for their lackluster vegetable intake, I'm here to tell you that neither needs to be true. This Cabbage, Carrot, Cucumber and Mint Slaw is one of my favourite salads to throw together. It's fresh and flavourful and, best of all, quick to prepare. 

In this version of this slaw, I've used a spiralizer for the cucumber but it's not necessary to have one. When I'm not feeling fancy (or when I don't want to do extra dishes), I either shred the cucumber with a box grater, or cut it up finely with a knife. I also suggest if you want to make this slaw ahead of time, to add the cucumber in right before serving so that it has a fresher appearance. 

Ingredients

  • 2 cups red cabbage, shredded
  • 2 cups carrots, shredded

  • 1 medium cucumber, spiralized, shredded or cut in thin strips

  • 1 cup of fresh mint, loosely torn

  • Juice of 1 lime or lemon

  • 2 tablespoons olive oil

Method

  1. Using a food processor (with shredding disc attachment) or box grater, shred the cabbage and carrots. Prepare the cucumber by either using a spiralizer,  box grater or by cutting into thin strips. 

  2. Combine the cut vegetables in a large bowl.

  3. Loosely tear up the mint and combine with cut vegetables.

  4. Toss vegetables with olive oil and the juice of one lime or lemon.
